Lemon Herb Chicken Skewers with Tzatziki Sauce

These herb-marinated chicken skewers, paired with a refreshing tzatziki sauce, make for a delightful and easy meal that’s full of zest and freshness!

Ingredients:

For the Chicken Skewers:

  • 1.5 lbs chicken breast, cut into bite-sized pieces
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh dill, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Wooden or metal skewers (if using wooden, soak in water for 30 minutes before grilling)

For the Tzatziki Sauce:

  • 1 cup Greek yogurt
  • 1/2 cucumber, grated and excess water squeezed out
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • 1 tablespoon fresh dill, chopped
  • Salt and pepper to taste

Instructions:

Marinate the Chicken:

In a large bowl, mix the olive oil, lemon juice, parsley, dill, garlic, oregano, salt, and pepper.

Add the chicken pieces to the marinade, tossing to coat evenly. Cover and refrigerate for at least 30 minutes, up to 2 hours.

Prepare the Tzatziki Sauce:

In a medium bowl, combine the Greek yogurt, grated cucumber, lemon juice, olive oil, garlic, and dill.

Stir well and season with salt and pepper to taste. Refrigerate until ready to serve.

Assemble and Grill the Skewers:

Preheat your grill to medium-high heat. If using wooden skewers, make sure they have been soaked in water to prevent burning.

Thread the marinated chicken pieces onto the skewers.

Grill the skewers for about 4-5 minutes on each side, or until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F (74°C).

Serve:

Arrange the chicken skewers on a serving platter.

Serve with the chilled tzatziki sauce on the side for dipping.

Tips:

These skewers pair well with a fresh Greek salad, grilled vegetables, or pita bread.

You can also add some cherry tomatoes, bell peppers, or red onions to the skewers for additional flavor and color.

If you don't have a grill, you can cook the skewers in a grill pan on the stove or bake them in the oven at 400°F (200°C) for about 20-25 minutes, turning halfway through.
