Grilled Salmon with Mango Avocado Salsa

Indulge in our tender grilled salmon paired with a refreshing mango avocado salsa. A culinary delight for any occasion!
Ingredients
For the Salmon:
- 4 salmon fillets (about 6 oz each)
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
For the Mango Avocado Salsa:
- 1 ripe mango, peeled and diced
- 1 ripe avocado, diced
- 1/2 red onion, finely chopped
- 1 red bell pepper, diced
- 1/4 cup fresh cilantro, chopped
- 1 jalapeño, seeded and finely chopped (optional, for some heat)
- 1 lime, juiced
- Salt and pepper to taste
Instructions
Marinate the Salmon:
- In a small bowl, mix the olive oil, lemon juice, minced garlic, paprika, salt, and black pepper.
- Place the salmon fillets in a large resealable plastic bag or a shallow dish. Pour the marinade over the salmon, ensuring each fillet is well-coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, up to 2 hours.
Prepare the Grill:
- Preheat your grill to medium-high heat. Make sure the grates are clean and well-oiled to prevent the salmon from sticking.
Grill the Salmon:
- Remove the salmon from the marinade and let any excess drip off. Grill the salmon for about 4-5 minutes per side, or until the salmon is opaque and flakes easily with a fork. The internal temperature should reach 145°F (63°C).
Make the Mango Avocado Salsa:
- In a medium bowl, combine the diced mango, avocado, red onion, red bell pepper, cilantro, and jalapeño (if using).
- Drizzle with fresh lime juice and gently toss to combine. Season with salt and pepper to taste.
Serve:
- Place the grilled salmon on a serving platter or individual plates. Spoon the mango avocado salsa over the top of each salmon fillet.
- Garnish with additional cilantro or lime wedges if desired.
Tips:
- Serve with a side of quinoa, rice, or a light summer salad to complete the meal.
- For added flavor, you can also grill some lime halves alongside the salmon and squeeze the grilled lime juice over the fish just before serving.
- If you don’t have a grill, you can use a grill pan on the stove or bake the salmon in the oven at 400°F (200°C) for about 15-20 minutes.
