Kick Off Your Football Sunday with These Delicious Chicken Empanadas!

Football season is back, and what better way to celebrate than with a new appetizer that will wow your friends? If you’re looking for something quick, easy, and absolutely delicious, these chicken empanadas are your game-day MVP.

Ingredients:

  • 1 Chicken Breast
  • Two 10-pack Goya empanada fold packages
  • 1 bottle of Olive Oil
  • 1 bottle of chicken broth
  • 2 cups of shredded Colby Jack cheese
  • 2 tablespoons ginger paste
  • 2 tablespoons of butter
  • 3 tablespoons Chicka-Licka-BamBam Chicken seasoning
  • 2 tablespoons minced garlic
  • 4-inch piece of peeled ginger
  • 3 green onions
  • 1 ½ tablespoons Sazon seasoning
  • 1 ½ tablespoons tomato paste

Instructions:

  1. Prepare the Chicken: Poke several holes in your chicken breast. In a pot, combine the green onions, minced garlic, and peeled ginger. Pour in the entire bottle of chicken broth and bring to a boil. Add the chicken breast once the broth starts to simmer. Cook for about 25 minutes until the chicken is thoroughly cooked.
  2. Shred and Season: After boiling, remove the chicken and place it in a bowl. Shred it with a fork, then mix in the ginger paste, Chicka-Licka-BamBam seasoning, and Sazon until well combined.
  3.  Cook the Filling: Heat a pan over medium-high heat and add 2 tablespoons of olive oil and 2 tablespoons of butter. Stir in the tomato paste and cook for a few minutes. Add the shredded chicken and cook for another 2 minutes until everything is well-mixed and heated through.
  4. Assemble the Empanadas: Place a spoonful of the chicken mixture onto each empanada fold. Use a fork to seal the edges, making sure they’re tightly closed. Arrange the filled empanadas on a tray and chill in the fridge for 20 minutes.
  5. Fry to Perfection!: Heat the remaining olive oil in a pot over high heat until it’s hot and shimmering. Fry each empanada for 1-2 minutes until golden brown and crispy.
