Maple Roasted Brussels Sprouts and Sweet Potatoes

These roasted Brussels sprouts and sweet potatoes are caramelized to perfection, with a hint of maple sweetness and balsamic tang—perfect for a comforting, flavorful addition to any meal!
Ingredients:
- 1 lb Brussels sprouts, halved
- 2 large sweet potatoes, peeled and cubed
- 3 tbsp olive oil
- 2 tbsp pure maple syrup
- 1 tbsp balsamic vinegar
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions:
Preheat the oven to 425°F (220°C). In a large bowl, toss the Brussels sprouts and sweet potatoes with olive oil, maple syrup, balsamic vinegar, thyme, salt, and pepper.
Spread the vegetables in a single layer on a baking sheet.
Roast for 25-30 minutes, stirring halfway through, until the vegetables are tender and caramelized.
Serve hot as a side dish or on top of a grain bowl.
